Cooking Chicken
The basic common ingredients that you will need for Chicken preparation are Ginger and Garlic Paste which can be made at home also by blending in a mixer. You can add some hot oil to store them in your refrigerator. Whole black pepper, dried red chili, cumin, coriander, fennel, carom, nigella seeds are used in many recipes which you can get from an Indian Store if you live outside India. Cardamom, cinnamon, cloves are required in most dishes to add that special flavor – you can follow the Home made spice mix section included in my book to make and store your own Garam Masala mix.
A few powdered spices like Kashmiri red chili powder (not hot like normal red chili powder or paprika), Turmeric, Cumin, Coriander powders and coconut milk are also needed and can be bought from the store. Do not use any form of Curry Powder to prepare chicken.
A few recipes demand fresh onions, green chili, tomatoes, coconut, curry and coriander leaves. Nuts like cashew, almonds, pistachio and raisins are used for garnishing soft dishes.
